i was just wondering if in the state of texas if you are owed 2 weeks payed vacation time if the company is required to pay it if you where to quit.. to go to work for a higher paying company.. or should i stick around for awhile and just never return from my vacation

Neither Federal nor Texas law requires that your employer pay out your vacation time on termination unless the company chooses to do so.

Should you just not return from your vacation? Sure, if you don't mind all future references saying that you abandoned your job, go ahead.
The above answer, whatever it is, assumes that no legally binding and enforceable contract or CBA says otherwise. If it does, then the terms of the contract or CBA apply.
