If you are being paid for your hours worked over 40 and over 8 in a day, and are not exempt employees, there is little to be done.

There are also requriements for your rest and meal periods as follows

BREAKS -- Employees must get a 10-minute break for every four hours worked provided that the work day is at least five hours long.

MEALS -- 30 minutes if workday is 6 hours or more

See http://www.ewin.com/articles/bull.htm for updates to California law.

Businesses are aware of the stress that this places on employees and even the danger it may pose to the public but so far there are no laws to prevent "overworking" of employees except maybe in trucking a select few other fields.
