My employer is closing the offive this year on Monday Dec. 26th since Christmas falls on a Sunday. Does he have to pay us for that day since he's closing the office as Holiday time?

Only if you are an exempt employee. If you are a nonexempt employee, by law you only need to be paid for the hours actually worked.
