If a salesperson in California is on 100% commissions is that employee entitled to take personal copies of records (ie contracts, proposals, sales records, pending reports, etc) upon termination for his own accounting if the information is needed to pursue litigation for unpaid wages? What is determined to be company's property and what is the employee entitled to have possession of?

No, you aren't entitled to copies of that sort of thing, generally speaking.
Your attorney can get copies from them during the discovery phase of the lawsuit.
