Can an employeer require an employee to reimburse or pay back the employeer when their cash drawer is short?

For example, I manage our tasting room, our attendents have a cash drawer but are not told the amount they should deposit each day. They are to count the drawer out to $200 and deposit the rest. When reports are run, I verify the amount deposited is the amount that is due. Say $198.56 is due and they deposit $178.56, can we require that employee to pay back the difference?

I should add that these are tipped employees. When a tip is received on a credit card, they take the cash out of the drawer.

Losses which are the result of simple neglience by the employee are not reimburseable. You would have to prove dishonesty, a willful act, or gross negligence to be entitled to get the money back from the employees.
