I keep seeing that my employer can deduct money from my salary for illness if they have a "bona fide plan, policy or practice of providing compensation for salary lost due to illness"? What exactly does that mean? Does it mean that if it says in my contract that I get 6 sick days and I've used them all up they came up with a plan and can now deduct money if I'm sick again?

I'm going to assume you're exempt. If you're non-exempt they don't have to pay you when you don't work, regardless of the reason.
If your employer offers a reasonable number of sick days (reasonable is not defined in the statute but generally is considered to be between five and ten) and you either have used all the days available to you or are not yet eligible for them, then in that case your employer can dock you for missing work due to illness.
If your employer does NOT offer a reasonable number of sick days, then you cannot be docked for missing work due to illness, but you can be docked for missing time for a non-illness-related, personal reason
