Is it leagal in Mississippi to work overtime on one day, say sixteen hours, and then be required to cut it back so they do not have to pay over time for the week? Every week I work overtime early in the week and then have to cut it so I have to work the weekend and do not get overtime.

That is legal in all states. The employer has no obligation to allow you to work overtime if he doesn't want you to.
