I was employed with this company in Kentucky for almost 5 years when we suffered a very slow period after the 9/11 attacks. I was given my job back two months ago and wondered what the laws are if any about my vacation time, retirement, and profit sharing. I was laid off due to lack of work and getting 3 weeks paid vaction, and profit sharing when let go.

I really didn't want to start over at square one, and I don't feel I should have to. I was given my old Employee Number, but not told about any benefits except health insurance, which I have already recieved.

The laws regarding vacation and profit sharing are whatever your employer says they are. The law does not dictate how these are bridged; that's up to your employer and the company policy.

With regards to the retirement, it depends on what the plan document says.
