As part of my employment I signed a contract with a consulting comapny. On the second or third page there's a clause that states I must give 2 months notice when resigning. This pretty much guarantees I can't leave for another position as nobody would wait 2 months for someone to start a new position. Is this enforceable?

Nobody here can advise you on the enforceability of a contract they haven't read. You'll need to show the entire document to a local attorney.
