I am confused as to whether or not I am entitled overtime, and I need to get it straight before i raise hell.

I worked May 26th to June 2nd, which is 8 consecutive days, Thursday to Thursday.

This is what confuses me
One and one-half times the employee's regular rate or pay for all hours worked for the first eight hours worked on the seventh consecutive day of work in a workweek
and the definition of workweek
Any seven consecutive days, starting with the same calendar day each week beginning at any hour on any day, so long as it is fixed and regularly occurring. "Workweek" is a fixed and regularly recurring period of 168 hours, seven consecutive 24-hour periods.

So does this mean the 8 days straight is bunk because it doesnt take place in the Sunday to Saturday week of scheduling?

Correct. If your work week is Sunday to Saturday, then those are the consecutive days in your work week. So, hours worked over 40 in that time period are considered OT. Employers have to set work weeks for just this reason, so it is clear when your overtime kicks in.

If your work week starts Sunday, hours worked the previous Thursday can't possibly count towards hours worked in that new week.
