I worked for a large company based in Colorado and put in a two week notice with my last day on December 13th. I have not received my final paycheck from the company as of today (January 7th 2008). I have called and email HR and I have emailed the Colorado Department of Labor.
what can I do to make sure that I get my check? Am I missing any steps? If I had direct deposit set up would they mail my last check or would they run it through direct deposit?

You're at the mercy of the employer and/or the increasingly stressed and overworked DOL employees (assuming you actually filed a claim with the state DOL, not just "emailed" them---that does nothing).
Have you contacted the employer? What do they say?

the employer has not gotten back to me yet. I have a demand for payment of wages form sitting on my desk that I need to fill out. From what I can tell, I am owed money due upon the next payable pay date which was on December 19th 2008.
I found out something strange. They apparently paid me on the 19th and again on the 2nd of January, but have since reversed both automatic payments to my bank account. I want to talk to HR and find out what to actually expect on my last paycheck but they have since been unresponsive.

Send the letter certified, return receipt requested. "If I have not been paid all wages due by XX date (I'd give them, like 5 days), I will have no choice but to file a claim for unpaid wages with the state Dept. of Labor."
