Is there any requirement in Texas to have Employment Agreements and/or non-competition agreements notarized?

I wouldn't think so, but a colleague said that Texas may have that requirement.

No. I've signed several when I worked in Texas. Doesn't mean the employer can't require it though, especially if it isn't signed in the employer's presence; in that case, probably a good idea.
