When the manager was hired she was told her hours would be 8 hours per day with one hour lunch time totaling 9 hours. This is even down on paper with the contract for our client. Now her boss is telling her to work 10 hours per day. Even though she is on salary this doesn't seem right to me since it doesn't require those longer hours in order to do the job. She is also "on call" from 5 am to midnight. She is a single working mom with no dad around and it is difficult for her to work extra hours and pay for care for her toddler. Help.

Unless the "paper" represents a legally binding contract that specifically says otherwise, (and only an attorney in her state who has read it in its entirety can say if it is or not) an employer may legally change any employee's hours to whatever the employer thinks is necessary, regardless of whether the employee thinks the time is necessary or not.
