I read some time back an article in nj law saying if your employer demotes you with more than a 50% reduction in pay, that is good cause for resigning. Anyone familiar with this?

Is choosing demotion over termination, mostly in part due to a 2 year non-compete clause, considered "voluntary" or can that be construed as duress?

Appreciate any opinions.

I think it is a great reason for quitting.

However, I think you are asking if you will receive UI for quitting under that circumstance. First, UI is usually a crap shoot... but is usually on the side of the worker.

In fact, that reduction in pay is enough for you to file UI while still working!
