working in NJ and my days are thursday to saturday 12 hours shift. I'm a EMT certified and transport dialysis patients to facilities. Since the Thanksgiving holiday is coming the administration move me and the entire shift to work on sunday whithout paying us the holiday and we get pay regular hourly pay for sunday instead of time and a half like every other facility is paying their employees. Is this apropiate for an employer to do? Are there any State mandated holidays that actually employees should get paid? After a 40 hours shift should everybody get paid time and a half?

Yes it is legal. No, they do not have to pay you more because it is a Sunday or a substitute for the holiday. Time and a half is only due to non-exempt employees after they work at least 40 hours in the same workweek.
There is no law that prohibits an employer from adjusting shifts or work schedules because of holidays. There are no holidays that any employer is required by law to give their employees. With a very few exceptions in Massachusetts, Rhode Island and possibly CT, you are not entitled by law to time and a half for working on a holiday; only for working more than 40 hours in the work week. Note that I said hours worked, not hours paid; if you do not work the holiday but are provided with holiday pay, that time does not count towards overtime calculations.
