I am a non-exempt employee in California. I normally work 8 hours per day, Monday through Friday. On occasion, I work weekends.

My particular question involves the 7th day rule which, as I understand it, means that if I work six days in a row then, beginning on the seventh day, I earn overtime for each of the first 8 hours and doubetime for any additional hours. This would also mean that on the 8th day, 9th day, 10th day, etc., all my hours would be overtime or doubletime. This would not end until I took a day off of work. Is this correct?

No, that's not correct. It's the 7th consecutive day in the workweek, the definition of which is made by the employer (it's not your particular work schedule, necessarily). When the workweek (which must start at a day/time certain) begins again, the clock starts again.

No, the requirement is for seven consecutive days in a work week, which is a fixed 168 hour period. After day seven, you are in a new work week and get to start back at straight pay again.
